Beat the heat with this creamy and satisfying chilled soup. Cucumber and avocado create a smooth and flavorful base, while yogurt and herbs add brightness.

Ingredients: 

  • 2 large cucumbers, peeled and chopped
  • 1 ripe avocado, peeled and pitted
  • 1/2 cup plain Greek yogurt
  • 1/4 cup fresh dill, chopped
  • 2 tablespoons lemon juice
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Directions:

  1. Combine all ingredients in a blender and blend until smooth.
  2. Chill for at least 2 hours before serving.
  3. Garnish with additional dill sprigs if desired.
